Maya spent three years sourcing single-origin beans across Colombia, Ethiopia, and Guatemala before settling on a house blend built for cold extraction. Every batch steeps for eighteen hours at 4°C — never rushed.

The croissants are laminated by hand each morning with French AOP butter — eighty-one layers, a full three-day process. We bake once. When they're gone, they're gone. Nothing here is reheated. Nothing is compromised.
